Thanks Akos and Monika for this amazing recipe for Hungarian pancakes… We were privileged enough to try the batch photographed and I can honestly say they tasted as good, if not better than they look. Thanks also to Akos for  the photography on this post…


  • 3 large eggs
  • 3/4 cup whole milk
  • 3/4 cup club soda
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • (olive) oil or butter
  • 1/2 kg cottage cheese
  • 1/4 kg sour cream
  • 1 lemon
  • 2-4 tbspoon sugar
  • a fistful of raisins

1. In a medium mixing bowl, combine eggs, milk, and club soda. Stir in
flour, sugar and salt to form a smooth batter.
2. Let it sit for 20 min.
3. Heat some butter or oil in a medium skillet. Use small ladle to add
enough batter to coat bottom of pan in a thin, even layer, rotating
pan as needed to cover.
4. Cook for 1-2 minutes on the first side and 1 minutes on the second
side or until the pancake is lightly browned.

5. Mix the cottage cheese with the sour cream and sugar.
6. Add the zest of the lemon and the raisins. Leave the raisin if you
don’t like it.
7. Spread the pancakes with this mixture and roll
it up.
